First reverse sear. Prime rib on Canada Day

Hi folks. This is my first post here. I'm a new egg owner (large). Have had it 2 weeks and have gone through a bag of lump already (getting the meat sweats just describing it)

So on Canada Day we pulled a 1 bone prime rib out to defrost. Since it wasn't much bigger than a thick steak I thought I'd give reverse sear a go.

Set the egg to 225 with the plate setter and a handful of Apple chips. Once stable I set the meat fat side down on grid. Monitored grid and internal temps using my Thermoworks thermometer.

It took an hour to reach an internal temp of 110 at which time I pulled it off to rest. In the mean time I removed the platesetter and opened up the vents. The egg reached 700 in pretty short order at which time I put the meat back on for 2 minutes a side and pulled it off when IT hit 120 and a bit.

The result was deelish

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    Thanks everyone for your kind reception. This BGE was purchased after owning a Bradley Smoker for 2 seasons (actually 3 Bradley Smokers ... All of which were returned as faulty within their warranty period ... Props to Princess Auto for standing behind the customer). Anyway I was fed up with the Bradley and opted to go for the BGE ... don't think I'll ever regret the decision ... So much more fun. For those who've asked, I'm located in Kilworth Ontario Canada (just across the river to the west of London) Canugghead ... Good call on the paper plate ... But washing dishes while in the thrall of the meat sweats isn't one of my favourite activities. ;)

    Welcome - nice cook. Really like the revere sear, the low and slow gives the smoke and rub a chance to work some magic while the hot finish provides a tasty crust if you want.
