Couple hens. One with DP tsunami spin and one with red eye express. Added fresh rosemary and thyme outside and in. 350F direct just a bit away from the hot spot. Moist and crispy!

Nice! I love Cornish hens. Just curious have you ever deep fried them whole? They are a real treat fried . Again yours look great!Location- Just "this side" of Biloxi, Ms.

+1 on the Cornish Game Hens. Egged ours Sunday myself after a 24 hour brine of kosher salt to draw the blood out. We love DP Raging River on chicken and it knocked our socks off. Then to make it a real Sunday comfort food meal, I added corn and mashed taters!

@RRP - what is your salt to water ratio for a 24 hour brine? I brine my turkey's for 24 hrs, but that is primarily because of the weight. I normally brine my chicken's for 6-8 hours.LBGE, Marietta, GA
