Bison filet cook, and beer pairing!!

Got ahold of some really good looking Bison filets the other night. Decided to pull them out and cook them this evening. I've had plenty of Bison before, but never the filets for some reason. Ground, ribeyes, strips..but no filets.
Paired with some cast iron potatoes and onions in the BGE, and then followed with some haircot verts and the Bison filets. Cooked too 125* and pulled, a perfect medium rare, and man they were so tender. FORK tender at that. Hard to want to go back to beef I think!
For the beer guys, I paired it with a Allagash Midnight Brett, a limited released beer for them. Funky barnyard Brett notes with a slight lactic aroma and roasted finish. Was great with the steak!

Making dinner even better with a Red Brick 20th's Anniversary Imperial Stout aged in Buffalo Trace bourbon barrels.

I guess I always seem to forget alot of people still drink yellow fizzy water these days! It's not a thick beer just because it's dark.

Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
Nice cook. I have found on my beer pairings I select a cold one and works just fine.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
