Don't mean to hijack the thread here but, whenever I meet y'all at a fest or in person, I've got some GREAT stories to tell about eating gator.

First you have to kill the gator. After removing the hide all the meat is cut off of the carcass but not off the legs. The legs are removed at the top joint and the meat is left on the bone. Remove the feet. Season the leg and put it into a vacuum pack bag along with some oil. Vacuum seal in a chamber vac and then freeze until ready to cook.
One day before serving, place the frozen bag in a sous vide cooker set at 55C. After 24 hours, remove leg from the bag and smoke on the egg for at least three hours. Slice the gator off the bones for serving.

Seems like it's all cooked here by somebody... You guys/Gals are great!!. Always a good recipe here for somebody else to try.

I had gator one time from the GA Mtn Eggfest that was prepared by Jim Legros...I think that was his name anyway. It was gator sausage and it was delicious!
