It is well below 0*F here. Part of the purpose of this thing is to maintain a small smolder and also heat the egg above 55* for cold smoking.

    I made it with a fine screen above the elements so I can use pellets or chips. The upper screen is removable. I can use briquettes and chunks and they will be in contact with the elements

    LS - your square peg in a round hole appears to be working. 
    I cut 3" off it today. I didn't really like the idea of sitting it on the floor of the egg anyway.

  • Think of it like a bone in roast. You're paying for the bone anyway. Really didn't cost anything to make but some labour. I had everything in stock at work.
