1st Beef Roast

Thawed out a nice 4lb Arm Roast yesterday evening and got a day from work today due to the bad weather. I'm thinking pulled Beef for supper tonight. For you who are more experienced, should I just S&P? What temp should I cook at? Should I fix it to about 205 or 210 IT? Suggestions please.

  • What if I'd start out at 230 degrees until it reaches maybe 165 or so IT, then throw it in my cast iron Dutch oven with a little liquid and some veggies and run it up to 205 or 210 IT ... would that work nicely? If so, what temp should I run the Egg when I move it to the Dutch oven?

  • Think an arm is what we (I) call chuck. I prefer a braise, almost the Travis Method for brisket. I think the meat needs the moisture, it always pulls just fine when it gets that butter feel to it. 
    For seasoning, I use the New England pot roast treatment (that's what Betty Crocker called in our 43 year old wedding present cookbook) Rub with creamed horse radish, some salt and pepper. If making gravy, sear first in DO, if no gravy then slice some onion and enough beef broth/red wine to cover the bottom of the pan, put the roast on top of the onions and smoke away.

    Rubbed my Roast with S&P and Granulated Garlic. She's ready to be tossed on the XL!

  • Going to start with a pit temp of 250 and go from there. I may wrap in foil and ramp the pit temp late this afternoon in order to hit my desired IT in time for dinner this evening. We will see how it goes.

  • ... just thought I'd mention that the wind is gusting on occasion today and the 'ol PitMaster has had no problem keeping the Egg pegged on 250 :D How sweeeeeet it is!

  • Roast was really good!

    Ended up going @ 250 degrees for 4hrs and it seemed to be stalling at about 147 IT. Foiled it and ramped the temp up to 325 degrees on the PitMaster. The Roast took about exactly 1hr after that to reach an IT of 210. Pulled it and took it inside while SWMBO made some mixed veggies. I liked the bark it gave ... seasoning was just right.

    It looks good RickyBobby but I'm kind of disappointed your thread didn't read like this:

    My XL is so much more awesome with this 4lb Arm Roast inside of it .... it ain't even funny! My God! I can't even put it into words. This Arm Roast just blows me away every time I eat it. It is so foolproof, but yet it's such a meat engineering marvel. Folks, I can't say it enough; if you don't yet have a Arm Roast for your Egg and/or Eggs please do yourself a favor and check out an Arm Roast at your local butcher! With my EQUALLY AWESOME PITMASTER IQ65,000,000 it's a set it and forget cook operation for now on with all my Arm Roasts. I learned how to do other meat cooks, but I will NEVER do another cook that is not a Arm Roast! This thing Amazes the chit outta me! I am doing Arm Roasts with S&P today for the BIG GAME. I lit my fire and immediately plugged in the AMAZING PITMASTER IQ65,000,000 and tossed in my Arm Roast. Set my pit temp for 230 degrees and closed the lid. I let the WONDERFUL PITMASTER IQ65,000,000 and the Arm Roast make out and  do all the work, meaning I let it bring the fire up to 230 degrees instead of me. I have never once overshot my Arm Roast yet. It has a Arm Roast Detection feature that is the BOMB and makes it AWESOME! Wife says she needed Arm Roasts for cooking today ... no problem. I wanted some Awesome Juice for when I foil the Arm Roast anyway. So into my truck I go to make a trip into town for some groceries. Arrive back at home 45 minutes later and guess what? You got it! My Egg is pegged on 230 degrees and throw in 12 Arm Roasts. I wouldn't expect anything less out of my INCREDIBLE PITMASTER IQ65,000,000 paired with a Arm Roast! Do you know why? .... because it FREAKIN ROCKS!!!  If you don't have one, BUY A ARM ROAST RIGHT NOW!

    LMAO.  I guess controlling my egg from my Note 3 while i'm 30 miles away is pretty bottom shelf.  Damn, I guess I need to step my game up so I stop chasing my own tail.   =))
