restaurant steak
Had $100 gift card to Longhorns so we went out last Saturday after the week from hell. I ordered the LG filet.. "and how would you like that cooked"...I said a perfect 125. It came out perfect. I started to take my thermapen but Sher-bear threatened me. Lesson, order to temp.

Man, I would have a tough time telling them what temp as i'd be scared they would spit on it.Next question, do you think any of these guys use thermometers anyway? If cooked steaks for a living, I would probably never probe it. Eventually, you just know by feel and what it looks like. I did a butter basted CAB Rib-Eye on a cast iron pan with no Thermapen and nailed a perfect medium-rare so it kind of proved to me my pen wasn't needed. Could I have done that 3 years ago, probably not.Just a hack that makes some $hitty BBQ....

When I cooked at a restaurant as a kid we went by feel. I've seen a lot of the restaurants I work at use thermometers. ..I always ask for temp on pork chops so I'm not eating jerky.

Ha. We too had a gift card to longhorn. Went last Thursday. Ordered a med rare ribeye. Within a few minutes the plate was covered in oil. It was the greasiest, saltiest steak I've had in a while. And they didn't have yuengling. [-(Slumming it in Aiken, SC.

I wish I could get that feel thing down, it seems like every cut "feels" different. I never ordered pork chops out.

That's sad. I have hair on my head so the only hat I wear is the foil one to keep the government from stealing my thoughts. You might see some of those in Sochi in a few weeks. I hear the US Men's hockey team will be wearing them. Heh heh heh
