Chicken and waffles - Fried or roasted chicken? Maple syrup or gravy?
I chickened out (pun intended) and cooked inside tonight rather than dealing with the 8 degree weather. I like chicken and waffles, made with fried chicken and maple syrup (Southern soul food style). Here in Central PA, that's unheard of, as the Amish, PA Dutch method is to use stewed or roasted chicken and gravy. I've done it with spatched chicken off the Egg in the past, and it's very good, but there's something about the crispy fried chicken bits, with the waffle and maple syrup I can't resist. As you will see in the picture, my son mixes the two types and uses gravy on the fried chicken. What's your preference?

If you never had it before, you need to try it. Living in PA most of my life, only had the Amish version with stewed chicken, adopted to the Egg with Spatched chicken and gravy. Actually had the fried chicken with maple syrup version the first time in Sacramento, at a restaurant across the street from the hotel I lived at for weeks called the Cafeteria. Ate it at least once a week, and had to figure out how to make it once I was home. Now one of my favorite non Egg meals.__________________________________________It's not a science, it's an art. In the South, always fried with maple. Gravy is for biscuits.
