    "So, if I understand this new procedure for smoking an amazing brisket, it goes something like this:

    1) start drinking whiskey
    2) S&P, oak, put on egg
    3) drink until hammered
    4) let fire go out
    5) pass out
    6) wake up in morning, start egg up again
    7) pull when jiggly like a VS model"
     
    I have to admit that this Centex Method appeals to me more than the Travis Method on several levels - especially the step that was left out.
     
    0) Have a friend buy and deliver a SRF Wagyu brisket.

    We'll bring it back no matter what it takes.

    We're gonna drink to the morning sun. 
    We've got a long way to get under the table and a short distance to get there. 
    I'm egg bound, just watch ol' TFJ's tears run. 

    Ol' TFJ's got that Shun on and she's hot on your trail. 
    She aint gonna rest 'til you're filleted or in jail. 
    So you got to dodge 'er and you got to FTC 'im, 
    You got to keep that bristket truckin'. 
    Just put that handle of bourbon down and give lakewade hell.

    They sell it at my local meat market. If you're ever near Athens, or Bishop, GA, you can pick one up at Striplings General Store....along with some of the best smoked sausage and country ham you've ever had.

    Just a heads up, if you fill out a form like you're about to order, including your email, and don't order they start sending you coupons via email.

    Basically, fill out the first page and get to payment options, they will then email stuff. I get coupons, recipes, etc.

    @BYS1981-thanks for the heads-up.  I got a friggin gift certificate for some high-end seafood outlet from a relative that would have gotten me into the SRF meat market.  Oh, to be so lucky!  There's always tomorrow!
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
