Looking for ham ideas - "Green Egg and a Ham"

Would love some step by step and recipes for a ham I would like to prepare for Thanksgiving; In addition the turkey I always bake on convection roast in my Wolf Oven.  I am not interested in an already precooked ham and then basically warming up on the egg.  Specifically looking for start to finish, raw ham that you get from a local butcher to the rest of the steps involved to let it compete with the turkey at the dinner table.  Thank you in advance for any of your thoughts and ideas.  Happy Thanksgiving!

When you went to the butcher was there anything specific you are asking for with the ham?

Just ask for a fresh ham. they had whole hind quarters when I was there so I told them to cut me about 15 lbs of the fat part (not the shank). they laid it out for me and I drew an imaginary line with my finger of the part I wanted. They ran it through the band saw and that was that.

Very helpful!  If I wanted to do an 8 pounder is that too small?

Does fresh ham = uncured? Or is it cured, but uncooked?

uncured, uncooked. just like a butt or a steak. Raw meat.

Thanks. I checked out your earlier post on Ham. Now I want to check to see if my butcher has fresh ham...

I got mine at whole foods. there is one in OKC.
