Hey Everyone I am considering doing a brisket and have been looking at doing the Travis Method but the video on the forum start up page by Dr. BBQ looks interesting, it doesn't look as juicy as I would hope but I like the idea of just doing a flat. I have never done a brisket and sure would love it to come out great. I have heard that the Brisket is the Holly Grail and it's time I stepped up and give it a whirl.

Many people express their dislike for people that use foil during the cooking Brisket. On a flat it can be very useful since the meat can be very dry. The method in the video is pretty straight forward on its use of the 'Texas Crutch' to cook it quicker and more tender.
I've used foil on full briskets and it does a great job in a much shorter time frame. If you know what you're doing, cooking without the foil can produce a better finished product but it takes much longer nad is more prone to errors.
