    For $150 ish more (in Iowa) I went MM just this week. But I've got 2 kids, too. The extra grid space for burgers/dogs was worth it for me. Plus this is a tailgating unit (not taking the XL anywhere) that needs to feed more than two. I don't see there being a wrong answer. Definitely nothing wrong with the "toy."

    You can make "burnt ends" out of pretty much anything. They won't be the actual crispier-pieces-around-the-edges that originally spawned the burnties, but if you cook/cube/sauce/re-smoke you will be just fine. I use that method for lots of different cuts of meat, especially the thicker trimmings off of things.

    I keep a big squeeze bottle of a mixture of sauces in the fridge: jar of blues hog, half bottle of gates, half bottle of either sweet baby rays or if masterpiece. I use Tennessee red on salads as a dressing (and on my pulled pork).
  • (Not quite)72 hour Beef Short Ribs

    Well, couldn't quite make it to 72, but the ribs were still pretty good after 69 hours with the SideKic. I didn't get many pics as the family was hungry, but I will gladly do this again. I seasoned them with salt/pepper and seared on the egg. A touch to much salt, but the tenderness and texture was crazy good. Melted in the mouth! I used the short ribs from a steer we just got from a friend. The only downside was the amount of fat in these ribs that I wasn't counting on. SWMBO wasn't a fan of the fat, so I wound up pulling most of it to try to get some fat out. Can't wait for sammies this week.

    I didn't set out to be low-carb, but when cutting calories out of your diet the big chunks are the carbs. I still ate pizza, just not the crust...etc, e
