(Not quite)72 hour Beef Short Ribs

Well, couldn't quite make it to 72, but the ribs were still pretty good after 69 hours with the SideKic. I didn't get many pics as the family was hungry, but I will gladly do this again. I seasoned them with salt/pepper and seared on the egg. A touch to much salt, but the tenderness and texture was crazy good. Melted in the mouth! I used the short ribs from a steer we just got from a friend. The only downside was the amount of fat in these ribs that I wasn't counting on. SWMBO wasn't a fan of the fat, so I wound up pulling most of it to try to get some fat out. Can't wait for sammies this week.

Thanks, haven't tried the ribs yet but want to. I was worried they might fall apart on the grill
