  • Tri Tip Rocks

    Tri tip was on sale a few weeks ago, so I split one in half, seasoned with DP Raising the Steaks, FoodSavered them, and off to the freezer. Today I put one in sous vide with the Anova for 6 hours at 132, and seared on the Mini. Plated with carmelized onions and mushrooms. Mighty fine  

     

  • Thanksgiving on the Medium...

    It's the year of the spatchcock turkey, but with a Medium, even a 10 pounder won't fit, so I went a step further and separated the legs for a little more flexibility. Able to fit it all in, with the back and neck going into the freezer for stock later on. Came out great, and so much faster and easier than a whole bird! With Grandma's Scalloped corn and oysters recipe and a batch of roasted root vegetables, made for a great Thanksgiving dinner!

  • Mini Thighs Ala Mad Max

    Got my new Mad Max turkey rub from Dizzy Pig today, and couldn't wait until I have time to do a turkey, so tried it on some chicken thighs on the Mini. 

     

    Served with roasted acorn squash. Good stuff  

  • Shrimps and Tomatoes

    Something a little different on the Mini tonight... smoked some grape tomatoes with a bit of garlic and olive oil, 

     

    then grilled some shrimps dusted with Dizzy Pig Mediterraneanish. 

     

    Tossed that with some linguine and probably the last of the fresh basil for the year. Pretty tasty! 

  • Scalloped 'Taters and Ham

    Just like Mom used to make, only better :)
