It's the year of the spatchcock turkey, but with a Medium, even a 10 pounder won't fit, so I went a step further and separated the legs for a little more flexibility. Able to fit it all in, with the back and neck going into the freezer for stock later on. Came out great, and so much faster and easier than a whole bird! With Grandma's Scalloped corn and oysters recipe and a batch of roasted root vegetables, made for a great Thanksgiving dinner!
