Lamb Lollipops...

Morning All:
Tonight was lamb lollipops...final plated dinner, with sweet tator fries...
Got there by starting with two racks of lamb that I cut a slit in between every other bone and stuff with a slice of fresh garlic, mint leaf and lemon slice...ready to go in...
all but one slit stuffed...
The racks then went on the small direct at about 375 topped with a sprig of fresh rosemary (at the bottom a chunk of Guava for more flavor)...
and the finished racks...
cut into lollipops and topped with a mint, butter, garlic and vermouth sauce...
Desert wasn't on the Egg, but it sure was good too!
Now time to get ready for another week!

Jay,, you know those lamb lollipops go great with red wine fries :laugh: Took a rack out of the freezer yesterday to cook tomorrow and hope they come out as good as yours.

Awesome looking cook. Rosemary and mint go great with lamb. I usually crust the lamb lollipops with DP Red Eye Express, but your version looks like something I need to try. I made lamb loin chops yesterday with a light coat of Dale's sauce and a heavy coating of Red Eye Express. No photos - they were devoured too quickly. -

I'm not sure it's a pretty big list right now. Everytime I knock one cook off about three more get added. :laugh: But popcicle lamb chops are next on the to do list. Ross' lamb chops and now yours always look so good.
