I've been holding onto this one for a while waiting for a special occasion. With Memorial Day and my #44 on the same day, that seemed like a good one for me.
Started with removing the shipping vacuum pack and added a patio of butter, spoonful of duck fat, and a few springs of thyme to each side of the steak before repackaged in my vacuum packer
It went in the hot tub for 3.5 hours at 128 then went caveman in the large 600 dome for 45 per side.
I'd give it a thumbs up!
