thawed out a 12lb'er this week, was planning to cook tonight but life got in the way! How long can I hold it in the frig? It's still in the package.

no problem. it will wet age in cryovac for a very long time. cook it in the next 2-3 weeks and you are well within the safe zone. I've gone 2 months and it was great.

I usually thaw them out at least two to three weeks beforehand. I think they are better that way.

Im not suggesting that you do it, but we have let them sit in excess of 90 days before. As long as the cryovac is not compromised, and the fridge stays less than 40 degrees (preferably 35 degrees), no harm no foul my friend. I'm sure that there is a limit to just how long that they will actually last. But under ideal conditions, I know for a fact that they will keep just past 3 months. A lot of times I can find real crappy select grade at dirt cheap prices. When I do, I usually let it ride in the fridge 8-10 weeks before cooking. It seems to let it relax a little. Of course that could just be in my head. But I do it nonetheless.Location- Just "this side" of Biloxi, Ms.
