I've got a 4 lb slab of pork belly (skinless) looking for a recipe.

Hey guys, have 1/2 of a slab of pork belly and looking for a recipe.  We tried the APL recipe but I think not having the skin made the results not as good as they should have been.

Any proven recipes for a skinless slab?
