Santa Fe Turkey Stuffeded Peppers

You know what happens when you get the itch, you gotta scratch it. My itch was stuffed peppers.  

Started out browning up some turkey brats that I removed from the casing. Then added jalapeño, onion,garlic,black beans,chopped tomatoes,cilantro cumin, corn and s&p

Filled up the peppers and getting ready to go on the large at 400° indirect

Covered in foil for about 45mins then uncovered added the Colby/Monterey cheese along with some cherry for smoke

And ready to eat. Topped with sour cream & fresh chives

This was the first time for making these and it won't be the last. Wicked good!!

    We had stuffed peppers a few nights ago. Yours look much better... Don't tell my wife :)

    That's funny @blind99 - my wife usually does the stuffed peppers but was working late so I took over.  I was way nervous until the first few bites were down the hatch.  All is well.  Lol

    Question if i may. Did you like the turkey as well as beef in the peppers? I have tried both pork and beef, but not turkey. You have raised my curiosity my friend.

    I actually could go either way on the meats. Turkey with the right seasonings is great as long as I don't dry it out.  This was not dried. I added the extras before the turkey is done so the juice from the beans and tomatoes keep thing moist.

    @SGH, sometimes when we sub turkey or chicken for beef, we add some powdered beef gravy mix to it while browning - just enough to add another layer, not to make it taste like beef.
