Back to "operation cleaning out" the freezer! Found this nice rack in the back left over from valentines day.  
Thawed, scored fat side, coated lamb in EVOO and dizzy pig cow lick.  
Plan on practicing the reverse sear on this one.  Cook at 225 till 110 ish IT, remove from heat, get egg up to nuclear, sear each side and serve!  Shooting for 125 IT on the rare side of medium rare!  The gentleman is here to help me through the afternoon!
