My last brisket was a fail in my book.
This one was 19# and respectively 17# trimmed. Nice and floppy with great marbeling. A Big thanks to my friend Brian @fusionhq on the Brisket location hookup.
Running with RW & Oak Chunks. Rub S&P. Pit set at 235℉.
It barely fit on the grid. I almost had to resort to the ole foil wrapped brick trick.
Good morning eggheads. It's coming right along. Shooting for serving time of around 1 pm for serving. Will start probing for buttuh at about 195℉ on this one.

Where are the graphs? What's with this fake graph porn? Geez ... by-the-by your batteries are a little low. And, would you at least move the Rockwood bags around once in a while ... the teddy bears inside the bags will develop flat spots in the fur otherwise.

Love the data stream ... it looks cool. The pit temp swings are much larger than I would have expected in the beginning ... does the stoker relearn the characteristics of the egg each time it's used? Looks like it took about three hours before it zeroed in to the 235 target temp.
BTW, I'm jealous. My teeny tiny brisket made it through evening snacks, one sandwich for lunch and batch of brisket chili ... then it was gone.

@Jeepster47 No the fluctuations you see at the beginning were before I attached the blower and was just dialing it in. I should've waited to start the logging but, I was tired and needed to get the brisky on to try to make my self imposed deadline. look how juicy that thing is. Need your brisket hook-up. I go to tillmans off old st Augustine rd and their prices a really good. Brisket at Publix is a rip off.
