Saturday Egging and Catchup

Happy that it's Saturday, and I don't really have anything pressing work wise that can't wait till Monday, no school projects to help with...
Went to Firecraft the other day for some Ozark Oak and they had none, it's on back order. So I got some Rockwood instead. I like them both and consider them about equal across the board; but the 10# bag size of the OO is just better for me logistically.
Heading over to the BIL tonight so I'm going to grill up a bunch of sausage for sausage and peppers. Not sure what's on tap for tomorrow yet.
Here are some pics from the past week... Both indoor cooks, one wok and one done completely in my Lodge CI. Has some snow and slop last night and they are calling for more Sunday into Monday. Lots of math homework to help with last week, common core sucks.

Light dusting of snow I see. We are in the midst of a mini-monsoon, this morning had just over 12" of water in a garbage pail I left the lid off of yesterday.Plans are for an inverted chicken (a la LS) for tonight, two of the grandkids might be here to spend the night. The Wii and the popcorn machine will get a workout.Enjoy the weekend!BTW - hope that's juice in the glass, don't want to strain your brain helping out with that math!Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

After a quick trip to HD for a couple big trash cans for both trash and another for lump storage, the egg is cleaned out, loaded with Rockwood and fired up...

What temp do you do this cool at and for how long? Do you get a char on the sausage?

I cooked this all at about 375-400 probably for about 45-1hour... the sausage was basically indirect with the pan of veggies between it and the flames. They did have some char on them; but it was minimal. The sausage turned out well, soft and easy to chew, not dried out
