Saturday Steaks & Mussels...

As a treat for Elise and I; I picked up a bag of mussels this morning that I am going to do later in the DO, likely inside as the temp is going to struggle to get to 20 today with a strong wind as well... Got some good Portuguese rolls to go with them
I will however be doing the steaks on the egg for dinner... Just having steaks and salad tonight, trying to keep things light

I'm interested in these mussels. I've been thinking about coming some. Also, just put some fillets in a marinade for tonight myself. I'm thinking a light salad is in order. Thanks for the idea.

Just steaming them in some white wine; after they open, draining them and then taking the cooking liquid and putting it back in the DO with some butter, garlic, shallots, pepper, and reducing it a little, adding the mussels back into the liquid and then some fresh parsley and lemon wedges...MSV Chill Spot

Oh, boy. With @hapster at the helm you KNOW these are going to be great! Where do you get your shellfish hap?
Personally I think mussels served without chorizo are a missed opportunity (they just pair so damn well!) but I'll be watching closely nonetheless.

I get my shellfish and fish at Wegman's or we have a local family owned seafood vendor that has had a great rep for a long time called Hill's Seafood
Can't go wrong at either place

One of my favorite restaurants in Charlotte, NC has the best mussels I've ever had. I was able to get my hands on the recipe so feel free to try at home. To make them better, you should do them on the egg so you get that smoky flavor. Inside is fine but outside is better.... enjoy!One order is about 15-20 mussels1/2 tbsp diced shallot1/2 tbsp diced garlic (or more!)1 tbsp diced tomatoes1 1/2 cup white wine2 tbsp whole softened butter1/2 tbsp chopped parsleysalt, pepper1/2 tsp chile flakeWe combine the mussels, garlic, shallots, tomatoes, salt, pepper in a saute pan and roast, ( you could just saute on top of stove), when they begin to open add wine and reduce by about half.Then remove mussels into serving dish and make sauce; add the butter, parsley and chile flake and constantly swirl the pan or use a whisk to emulsify the butter making a smooth sauce(this may take adding a little more wine to give you enough sauce and adjust with more butter if necessary. Taste for salt and pepper, and pour over mussels. Top with a thick slice of country bread that has been grilled or toasted and rubbed with raw garlic clove.Dallas, TX
