Recently, I read an article about a bourbon company making a limited edition brisket infused bourbon using Franklin's briskets. I decided to try my own version.
I smoked a brisket just for this trial. I put 4 slices of brisket, plus some drippings, into the mason jar and added the bourbon. The plan is to leave it inthe fridge for 7 days. Then, all of the bits and pieces will be strained.
Pure awesomeness OR gross?!?!

Just by the thought of it, gross. That's what Scotch is for. Perhaps, smoke only would work. I've had smoked, bourbon barrel aged beer that is mighty tasty.

Here's the original piece I suspect you found:Not a company so much as a bar in Austin that's doing this.I don't know - there is some really good bourbon available in the US. Bourbon infused with brisket isn't bourbon. I don't know what it is, but it's something else. I've done this with bacon and a bottle of Bulleit and I ended up not being a fan. Smelled good but the taste wasnt better than bourbon.
It's called fat washing and you don't add bacon, you add bacon grease. Craig (should I call you Big or BGC?), I strongly suggest after you strain you freeze the liquid (it won't freeze) but the fat will come to the top and you can spoon it out and filter it again.
Good luck, but my guess it's the kind of thing people will have just one drink of. -
