Monday... Guinness Brats & Kraut

Some really nice Fall weather is place so I decided to repeat the brats and kraut cook from a few weeks ago...

This time I will be sauteing some cheddar & potato Pierogis inside on the stove as well

This should be enough between tonight, last night's beef stew, and the pork roast from Saturday night to bridge us till we leave Thursday for the beach...

Here are some pics so far... Decided this time to brown the brats direct and then throw them in the DO with the kraut and Guinness and back on indirect.... Will start the pierogis in a little bit.

Thanks guys... A final pic; my Lodge skillet after sautéing up the pierogis and onions, simply cleaned it with a couple of paper towels, no water...

Just wish the surface was a little smoother

Looks incredible! Love Brats and Kraut! Never heard of a Pierogis before. Had to Google it. Looks similar to our crawfish/meat pies down here. (NOLA). I'm sure they have em just never saw them before.

Kraut and Brats (German) with Guiness (Irish)? Yeah Buddy, reminds me of one of the best lines from the GODFATHER when Tom Hagen informs Mr. Woltz that he's not Italian (when Duvall goes there to 'make him an offer he can't refuse' to get Johnny Fontaine that part in the new war picture he's filming) but that he's German-Irish: Woltz, " Well let me tell you something my Kraut-Mick friend..."

Primo fresh brats... sauerkraut, and Guinness... brown the brats first direct and then layer them in the DO with kraut. I added some pepper and thyme as well... top off the whole thing with one or two cans of Guinness. On the egg indirect at about 350 for an hour or so...

Pierogi are like Polish ravioli... Filled with different stuff like potatoe & cheese, kraut, onions etc... They can be boiled for a few minutes; or cooked like it did, sauteed in some butter and onions. The ones I made where store bought so all I had to do was cook them...

@hapster - A while back, I read about a guy taking a knotted wire wheel to a Lodge skillet to make it smooth. Seemed to work well for him.
