Could I Build My Own Dry Aging Locker?

I was at work talking to a buddy of mine and the idea of dry aging came up. There is a device called a Cigar Oasis Magna Electronic Humidifier found on amazon for about $180. It regulates humidity up to 80%. It also circulates the air with built in fans. If I threw this in a fridge would it do the job?

Good way to piss away $180...but what do I know? A common refrigerator made within the last 40 years does the same thing! I have aged many sub-primals and there is a much easier way, whether you want to go commando or to please SWMBO then use UMAi Dry.Re-gasketing America one yard at a time.

I can't speak for the cigar machine as I have never dealt with one. But it can most certainly be done with a small humidifier/dehumidifier and convective fans. The question to ask is can the cigar machine hold up under high humidity demand and cold temps. If it can then I don't see why it wouldn't work. I would be tempted to trial run it in a empty fridge for a month to see how well it held up before I loaded up with several hundred dollars of meat and risk it failing. Just my thoughts my friend.

LOL ...given the original question I'd opt to go commando or UMAI long before I went with $180 let alone $600! Dry aging beef is not rocket science, nor requires expensive equipment at home. Pleasing SWMBO is another matter and can be achieved far far cheaper.Re-gasketing America one yard at a time. -

@RRP,, My daughter sent me that article. She was researching dry-aging. I guess her boyfriend went out and just cut some meat off a moose that had been hanging for a long time last year. She said she was grossed out at first, but it was the best meat she's ever tasted. I can only imagine what it looked like. Alaskans have some bizarre methods of food preservation. At least she tried it, she won't even come close to trying their Stink Heads.Steven

I actually thought about making my own WIC (walk-in coiler) at my home. I DO it for a living so it would be at cost but, still the cost effectiveness is sketchy so, thus far I've opted to not do it. Ladies & Gents Johnny Cash! Love it! @stemc33 But, on a very serious note I wanted to build out a 8x12 WIC using a R404A low temp high ambient unit which would allow it to be either a WIC or WIF. Using 6x6 studs and then have my buddy spray foam (open cell) on the walls, ceiling and floor. It can be done. My "cost" would be roughly $4,500. Oh, I know that this is probably overkill for just dry aging, but I wanted to build this mainly for curing meats after getting Rhulmanized by the forum here and since I lack a basement and all...I digress.
