I don't do overnight, so we set up tonight to start bright and early.
Took a couple of pounds of hard fat off, rubbed with mustard and Montreal. Set up with generous oak for smoke.
Unlike most my essays this one won't be all at once, but I will post as it goes along.

Yeah I suppose that's right. I am putting a brisket on tonite, I wish I could get some oak around here. I'm going for a drive here in a bit with the wife to do some shopping and I'm going to look hard for it!NW IOWA

The meat was too cold for the probe this morning, got the dreaded LLL. So now, two hours in I start the monitoring of the internal. Was 125.

Congrats Doc-Most eggcellent cook. You have now been sucked into the brisket vortex and will never escape-so relax and enjoy the journey. Gotta admit you jumped in with quite the quantity going with two out of the gate-but you will not find better eats. Home-run for sure! Continue to enjoy!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
