Pigs Head To Mix It Up
Tired of the same old- been wanting to try, and will do this again- I did one on LBGE, a friend of mine did one on a chest smoker ( we had a throw down)Most Eggscellent ............Like to think mine one
Scrubbed clean, brined over night with salt, brown sugar, apple cider vinegar. Rubbed down in the AM with olive oil and a brown sugar pork rub, ran dome @ 275 for 3 hours, I was a bit behind so I bumped it to 350 for 2.5, pulled it @ 190 and rested it for an hour or so. He did his 8 hours @ 225, but I don't think his ever hit 190 as it "cut" like ham, but was still great ( I wrapped the ears and snout with pig skin rather than foil)

The jaw meat is my absolute favorite on a swine. The head looks excellent! Do you ever do whole hogs? I have some spirals that I made to "set" the tail. Will send you a photo if you like. Very easy to make and the tail comes out looped perfect every time.

@SGH I have done one on a borrowed pit, came out great and was quite easy- would like to do some tails and would appreciate to see the spirals- Don't know why more people don't do heads- they fit well in the EggVisalia, Ca @lkapigian
