@tarheelmatt-nothing like a forum poster riding in at the end of a stressful trip. And as you know with the piggy, the beef brisket stall is much the same (now witnessed). Sounds like the end-run is close. Enjoy the eats-and from a personal perspective don't use the point for burnt ends-just slice and eat as it is the best hunk of beef. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

All you guys that have helped me through the long day, thank you! Took a metal skewer and poked through the brisket easily. Temp probe went in like budda! I am pretty excited to slice for sure.Here are a few pictures. I have better ones taken with my DSLR. The crappy GS3 pics will have to suffice for now.------------------------------

lousubcap I noticed a few say make burnt ends, however my intentions are just as you noted, no burnt ends and enjoy all that goodness (hopefully).------------------------------

It's ok, I did my first brisket and I didn't turn to stone. Of course being from the western part of NC does not qualify BBQ Certification down at Skylight.

Had a difficult time slicing some of the point. It was unsliceable as it was very soft. Guess that's a good thing though. Had tons of flavor.
I would definitely do it again.
