So was trying to perfect my brisket recipe lately. Started out with one of these bad boys.

Someone told me to pat it dry before I rubbed it so why not give that a try too.

    Great job. I haven't done a brisket in a while and that inspired me to do it soon. I'm jealous you can get a quality whole brisket at Costco for that price. Mine only has flats.

    Seriously, that is a great looking brisket with a nice smoke ring. 
    For my last brisket, I finally used Oak (SWMBOd liked it better than hickory), and I do think I will try and mix that with a fruit wood. 

    Bx - > NJ ->TX!!! 
    All to get cheaper brisket!

    Btw. I'm grilling shrimp abts on my KK and have to measure the temp on each one as to not over cook. Calls for multiple thermocouples.

    @MCN-figured something was up when that brisket jumped from  what appears to be a LBGE (with snow in the background) to an XLBGE all on it's own.  The rest is history :)

    I was thinking "did he remove the point pre cook"...scratched my head for a sec for sure.

    What convinced me that it wasn't him was the picture of the hand patting the brisket dry.  The hands were too rough to belong to a nurse. lol   :P
