That is remarkably beautiful! please accept my compliments
I just don't understand how it can still be light out for your plated pic...everytime I cook something on the egg, doesn't seem to matter what time we start, it's always dark when we finish??? :P -

I like the sound of that, the closest thing we have to exotic is a pair of cardinals, but we are very happy to have them :cheer:

Best darn Madera to ever grace you palateLarge, small and mini now Egging in Rowlett Tx -
Not much smoke. I used all the leftover lump that was in the ash can. The pork and taters were done on the egg yesterday so there was plenty of flavor from them.
Dial up LOL :laugh:Large, small and mini now Egging in Rowlett Tx -

nice looking cook, smoke or not.
funny thing about mom and the 'puter. she worked for Ken Olson (digital computing). She used to tell us in 1982 or so that she could type a message to someone in their other office and they could get it 'just like mail'.
i had a Pro 350 in my bedroom, with a modem connection to their HQ. had to be 1982 or 83 at earliest. stone age...

Here is a good link and a short read:[ul]http://www.intowine.com/madeira.html[/ul]
It is a cooked red wine and legend has it that our founding fathers drank Madera while writing the Declaration of Independence and the Constitution. In colonial America it was considered a throw away (cheep) wine by the British. The barrels destined to the New World also functioned as ship blasts. Sitting in the ships hole resulted in "cooking the wine" during the voyage. Reading old manuscripts, the British were puzzled why the Madera in the New World was better tasting than Madera in England.
I have had an opportunity to taste some very good Madera's and Ports and I still think this is one of the best.

Those were the days. We were just beginning to get computers in the lab...all Dec Command language. Gawd that was the worst! It always seemed to be in order to write a program in DCL you had to go north first to get south. Flat files were our bane, so easy to write over files. It never failed the file that was erased was the file an attorney subpoenaed. We were all glad when Oracle based software arrived.Large, small and mini now Egging in Rowlett Tx

Lucky you,
I used to live in the bay area and trips to V. Sattui to get this fabulous Madera were a common event while I was down there. On a business trip to San Francisco, I even rented a car just to do a round trip to V. Sattui and bring back some bottles up here in Canada. Unfortunatly for me, I drank my last bottle last year.
Enjoy !

Talk about kicking it up a notch or two... that looks fantastic Joan. My hat is off to you.
I have always treated them as type of a snack and I like the idea of using the Serrano. Mmmmm.
