Backstraps. Cut in half like a sub roll, added garlic and pepperjack. Coated with DP Swamp Venom, wrapped in bacon + more swamp venom.
Cooking indirect until barely med-rare. Quite tasty, even for non-venison lovers. (Soaked in buttermilk and rooster chili sauce for 4 days.)

You can't beat a good backstrap on the egg. I have one left from this year.

4 day soak- really should have been tender !
I assume you reassembled the two pieces and then wrapped with bacon?

Tender and not gamey for a full rut back.
I didn't slice all the way through -- left a "hinge" of meat on one side. -
I do nearly the same thing......I use a cream cheese and herb stuffing! Very delicious!
