Legs up or down- Pizza set up

Hi All,

been a while since I made a pizza. Trying to remember my set up. Should it be:

plate setter legs up- grill - stone?

or

grill- plate setter legs down - stone?

will be cooking at temp b/w 550-600.

    It's a preference thing, but if you do legs down you need to create some gap between the plate setter and the stone.

  • I always go legs up, then grid, then stone.  It's just easier.

    I always did legs down, then about 4" of spacers, then the stone. No grid needed.



    I hate it when I go to the kitchen for food and all I find are ingredients!

    Actually, neither of the two options.  What you want is an indirect setup, an air gap, and a pizza stone 2-3" above the felt line.  Its your choice on how you get there.  

    Your first option leaves the stone too low.  The second leaves no air gap between the indirect and pizza stones.

    I normally use a plate setter with legs up for the indirect piece. Then a grid (as a base for what follows). Fire bricks to get height and then the pizza stone.

    Some say that legs down will fry the gasket quicker. Mine is already fried so I usually go legs down+spacer+stone.  I think I get better air flow, plus it gives me a chance to burn off any crud on the plate setter. 

    You can use just about anything for a spacer on top of the plate setter or grid. Cake pan, bunt pan, dutch oven, bricks, etc. 




    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    LOL, I fried my gasket long before I tried a pizza so I can't confirm that theory. But I've had a Rutland gasket since my egg was about 3-4 months old (nearly 8 years now) and legs down, 900° pizzas don't phase it.

  • Thanks for feedback!!! I went legs up with fire bricks. That that pepperoni pizza looks delicious!!
