Yesterday was my birthday and my son brought me a 2 1/2 lb porterhouse steak. Indirect at 300 until internal of 110 and then down low full blast to 125 with the therm open. I let it sit while we threw together a Caesar salad. Wife and I really enjoyed it!

Cooked to perfection too. It's breakfast time but that makes my mouth water.

Thanks for the birthday wishes. I think it climbed to about 130. The red wine was Angus, auzzie cab (very good). I've had a bit too much red meat this week. Time for some chicken I think? In the bush just East of Cambridge,Ontario
