@pgprescott seared the steak first, then put the regular grate in and cooked the plank for a few min and then flip the cooked side up and put the steak on and let it go till the temp you want1 · -

And here's the rest of the story... The steak was outstanding. Nice and juicy with just a touch of smokiness from the cedar. Only ate half of it for dinner.4 ·
