Good luck! Is that 210 grid temp or dome temp? Either way that is pretty low. If you plan on eating it today you might find you need to bump that up.1 · -

I think I would just set the vents almost closed so the dome temp is around 250 degrees and let it ride at that temp. Open up the vents when it is time for the sear.1 · -
