    Let it run for an additional 4.5 hrs after the chicken was finished.....temp set 230, and it was within 2 - 3 degrees the whole time........ ready for a long low and slow cook now!

    Dino Ribs are on and smoking away. Put them on about 11:30am....a little later then I initially wanted to.....oh well. Good call on the membrane, I would have completely forgotten. Lol
