When I have cooked numerous pieces of meat on my large the bottom always cooks a lot hotter. If your temp gauge said 275 I bet the bottom grate was close to 300 with all the meat covering the briske…2 · -

I steam or vacuum seal and sous vide. Much better option than cooking smaller pieces.2 ·
