    Well, heck, maybe you shoulda advised DC to chuck those silly thermometers altogether the other night as a solution to his problem and just rely on his Egg-fu or super powers.

    Until he becomes a super-duper smoker dude like you, though, Wess, I'd recommend that he understand the basics of checking and calibrating his thermometer to the extent possible. Do you find that objectionable? Why?

    From the links in the brisket thread, we learn that no, that much of a drop is not normal. The Whiz's site says the temperature may drop "a degree or two." The thread at the California BBQ site also says it can drop "a couple of degrees." Addicted to BBQ says the internal temperature "may even drop slightly." Not one says a drop of eleven degrees is "normal," much less "perfectly" so. In fact, it's 5-10 times what is "perfectly normal."

    You also say that he shouldn't worry, that the temperature would come back up. DC himself says that "8 hours later, there had been almost no movement in the temperature on the probe - it had gotten to 156F (from 153*)." So, contrary to your flat assertion, he had plenty to worry about, and your assurance that things were right on track were exactly wrong.

    Let's turn this around, Wess: What in the post I cited turned out to be true? Why would anyone listen to you?

  • i don't think tweev's error was "minor". he said it was 'impossible' for temps to drop. and his "something else is going on" was based on that so called impossibility, not on the difference between a common 5-degree drop and an unusual 11-degree drop.

    he essentially said it was not possible in any way for a brisket to drop in temp during a cook, and never made the distinction that "ok, it might be possible for 5 degrees, but 11 degrees is odd".

    his point all the way through was everyone was incorrect, despite his never having cooked a brisket on the egg.

    his willingness to go INSTANTLY to proclaiming absolute knowledge regarding something he had no experience in is what brought out the 'entertainment'.

    You asked what wasn't true...I pointed to the two main pieces of advice you gave that were utterly wrong. Was I in error? I also mentioned where the fellow you trolled, Tweev, was far closer to reality than you were. So far, you haven't come close to refuting any of it.

    If "defamation" consists of pointing out the errors of a foul-tempered sub-literate, call me a defamer. Your lawyers will, however, disabuse you of your assertions as it applies to the laws people in the real world use.

    Well, Wess, then you need to send DC an email explaining how his dry-as-a-popcorn-fart brisket is exactly how brisket is supposed to be, and that any idea of moist, tender brisket is utterly wrong-headed.

    If he'd taken Tweev's (admittedly vague) advice and looked deeper into his situation, he might have found the problem. As it was, he was told by folks like you that he was in the clear. Oops.
