Country Fried Steak on Egg

I used sirloin because I had some that had to be used. Beat it with a mallet, dredge in flour and egg wash and into cast iron for 4-5 min side at 450.

Until I saw a Bobby Flay/Paula Dean throwdown on country fried steak I had no idea that brown gravy was the proper way to go. Up here you always find white gravy.

Cook looks fantastic.
Did you use one of the throwdown recipes? If so would you post or post link.
I am interested in more details of the cook, such as any seasoning in the flour and did you use oil & how much during the cook. How did you make the gravy. Just a few questions.

I have more pics on my blog http://www.busterdogbbq.com/blog/ I just was hungry for CFS so I thought I could use my sirloin for it.
I basicaly seasoned with Plowboys Bovine Bold and let the rub melt into the meat. In a couple cups of flour I had cracked black pepper and a pinch of kosher salt. In the egg wash it was one egg and 3 cups milk. Flour, eggwash, flour.
Raised grid at around 450 dome. Enough oil to cover the the bottom. Probably could use more. I would also make the meat thinner.
Potatoes were red potatoes cubed and boiled. Smashed and a little milk added. I admit, I cheated on the gravy and used some Tony Catcheries(sp) gravy mix but there was enough left overs in the cast iron to probably make a really nice gravy. -
