Cooked an apricot pork loin tonight.
Sauteed some shallot and garlic and minced apricots, rolled it up in the pork loin with some of DP's new pineapple head.

No, I cheated....instant with minced garlic.
It was a late supper tonight, with all of the wet weather for the last five weeks the egg was not cooperating tonight. -

Wayne, don't you LOVE the camera?? I took pics of a pair of blue birds a the studio yesterday feeding babies in a house and was amazed at the zoom. I love mine. oh and the pork looks good too :P
