Apricot Pork Loin

Cooked an apricot pork loin tonight.
Sauteed some shallot and garlic and minced apricots, rolled it up in the pork loin with some of DP's new pineapple head.

    No, I cheated....instant with minced garlic.
    It was a late supper tonight, with all of the wet weather for the last five weeks the egg was not cooperating tonight.

    Wayne, don't you LOVE the camera?? I took pics of a pair of blue birds a the studio yesterday feeding babies in a house and was amazed at the zoom. I love mine. oh and the pork looks good too :P
