Nice looking gyros. I did lamb Kafte at Eggfest, you may want to look up that recipe if you like the gyros.

Not sure percentage-wise, but lamb shoulder is on the very fatty side to begin with, & I added an equal amount of beef trimmed off a t-bone steak, I left all the fat on (when I was putting it into the food processor I had some reservations that it was too much fat, but still ended up the way it did)
Come to think of it, the real thing almost has that 'catering' meatball texture, a little springy or spongy, no flakiness at all, almost like they add some kind of binder to ithappy in the hut
