  • Zippy,

Nice looking gyros. I did lamb Kafte at Eggfest, you may want to look up that recipe if you like the gyros.
Have you got a package yet?

Not sure percentage-wise, but lamb shoulder is on the very fatty side to begin with, & I added an equal amount of beef trimmed off a t-bone steak, I left all the fat on (when I was putting it into the food processor I had some reservations that it was too much fat, but still ended up the way it did)

Come to think of it, the real thing almost has that 'catering' meatball texture, a little springy or spongy, no flakiness at all, almost like they add some kind of binder to it

F, I'm gonna go look on my porch, sometimes they stick things in there to 'hide' them from would-be not-nice people

  • Marc,

I'll see if I can put a trace on it tomorrow. If not, Monday. It is Christmas but they said four business days.
The Kafte recipe is posted in the eggfest bok that Bill (Wise One) does.

    Zip,
Good looking grub as usual, nice tutorial as well. If I has your imagination I might end up being a bit dangerous
