Ok, so my butcher was out of prime bone in ribeyes today and talked me into trying some of his Kobe steaks..these things look pretty good and at the price should be outstanding...
My question is this..I've never prepared it and from a brief read on the net sounds like I can screw it up if I cook as usual beef steaks..I usually cook my steaks to medium..has anyone on here cooked any Kobe and if so how did you prepare and cook them?? Any help would be appreciated...

Unfortunately, your Egg was made in Mexico. See if one of your friends has an Egg made in Japan.

Yep, not a fan of taking Kobe/Wagyu past Medium-rare. Keep the seasoning very simple, a thin layer of your fat of choice (EVOO, Butter), sea salt and fresh ground pepper. That's all you need, let the flavor of the beef ring through.
Other than that, I don't treat them any differently from a good piece of Prime beef. -
Brad,
Have you tried any of the wagyu from CM

A handful of times....as with most, it's not cheap! You?

i wouldn't use anything on them but salt. olive oil, even peanut oil, seasonings, etc. will burn at super-sear temps. salt can't burn, it's a rock.
i'd maybe hot tub them, salt, sear like a banshee, then add some pepper and maybe a little butter on top or a bearnaise on the side. if not hot tubbed, maybe reverse Trex, or of course, Trexed egli avea del cul fatto trombetta -Dante -
Thanks Broc..that was VERY helpful   :woohoo:

I've seen them up north, ny strips only at 46$ per lb.
Looked nice but no buy here. I've recently started buying steaks from a caterer, lees market on 38,th. She cuts them for you to size. Better than anything ive found at CM so far. Have only bought filets though.
