I am curious about your favorite method. I pull. I would like to chop sometimes but its usually to tender and just falls apart! That's a good problem to have! But still I would like to hear what my fellow eggheads have to say.

As long as it's good, I'll take it either way....

If you want to make chopped or sliced pork BBQ then pull it at a lower temperature, 180-185, before it gets to the "fall apart" tender stage.

I've always pulled, but I tried chopping a few mos ago. Too easy to chop those few fat pockets I always find in there, and it just didn't taste/feel the same. So, I went back to pulling, and I liked it better. Just my 2 cents.
