Start Of A Small Cook

My MIL passed away in January, and we are doing a Celebration of Life Saturday up in NH. Borrowed a friends Shirley and just 8 butts in to the smoke bath. I'm also doing 6 chuckies to make PSB for those that don't eat pork. 


I think some of these porkers must've been on growth hormones as I had a couple 10 & 12 lb butts (average is typically 8 in my experience). Feeding around 100 adults plus kids.

    Sorry for your loss, Solid Cook , lately butts I have been getting are in the 10-12 pund range especially if you are not buying comoddity pork

    After getting some color on the chuckies I added some red, orange, and jalapeño peppers, along with 4 cans of Guinness to each pan. I'll let them braise and let the jus thicken up quite a bit before covering the pan with foil till the finish.

  • Beautiful cook, Mike. And ambitious to serve that many. Well beyond my experience. Love the assortment of colour in that shot of the chuckies. I have no doubts that all will eat well. “Sufficiently suffonsified”, as my late, maternal grandmother would say.

    Way to bring closure to the family.

    And what a great cook rounding into form right there.  Very nice.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    The most I have served was 1,500 folks at the nuke plant I worked at. I had an army of assistants to help, I used this Shirley and mine (since sold it since the wife's asthma caused me to close down the catering business). 

    That's why I said this was a small cook.
