My MIL passed away in January, and we are doing a Celebration of Life Saturday up in NH. Borrowed a friends Shirley and just 8 butts in to the smoke bath. I'm also doing 6 chuckies to make PSB for those that don't eat pork.




I think some of these porkers must've been on growth hormones as I had a couple 10 & 12 lb butts (average is typically 8 in my experience). Feeding around 100 adults plus kids.

After getting some color on the chuckies I added some red, orange, and jalapeño peppers, along with 4 cans of Guinness to each pan. I'll let them braise and let the jus thicken up quite a bit before covering the pan with foil till the finish.

Beautiful cook, Mike. And ambitious to serve that many. Well beyond my experience. Love the assortment of colour in that shot of the chuckies. I have no doubts that all will eat well. “Sufficiently suffonsified”, as my late, maternal grandmother would say.
