    Getting ready for Celebrate Sausage 2026, thought I’d bump this old thread see if I can get anyone interested in Sausage Making and Meat Curing again, fallen asleep off a bit the last couple years…. This is a 6.6 shoulder , hand seamed to remove the Coppa , this will be for Sausage and Capicola …. Pork Butt, it’s not just for pulled pork  B)

    Sausage meat will cure for a day or two, coppa about 3 weeks

    Looking forward to October and season 7. I've made quite a few sausage recipes from Eric over the past years, I just make the basic ones, no long curing as I don't have the equipment for some of these. Maybe one day. Will you have coppa included this year?

    No Coppa for Celebrate Sausage, but I do make it regularly…. It’s probably one of the easiest cures you will ever do, when you are ready feel free to message me
