Besides the 3-2 1 method, what is the best way to cook ribs on the egg?

    Personally I try to never wrap until nearly the end , never spritz …. Bark set well, fat rendering starting to get “ bendy “ I’ll wrap , no liquid , nothing… meat side down for maybe 30 minutes to push it past and then open foil turn meat side up “ foil boat” the ribs until bark resets , maybe 30 minutes …no glaze no sauce , served on the side if wanted

    Most people fear The Brisket, but I've had no problem with them at all.  Ribs have been my Nemesis; sometimes they come out okay, other times not.  I did finally figure out last year that what works for spareribs, may not work with babybacks, and vice-versa.  
    Nothing valuable from me to add here, but I'm keeping an eye on this thread; also hoping to learn.
