Double cut pork chops smoked in the Minimax and poutine

It's been a long time since Iposted a cook. Or, indeed, used my eggs. I was driving past the butcher's today and had a sudden urge to cook that @The Cen-Tex Smoker classic, and one of the revelations for Egg-ing, double cut pork chops with Tsunami Spin.
I bought two of them, one for myself and one for Mrs. Stormbringer. However, when I took them out of their packaging they were 2lb each (!!!). I decided to cook one, cut it in half before the sear, and serve. Dusted with Dizzy Pig "Tsunami Spin", slow cooked in the Minimax at 275F until 145F IT, cut down the middle and seared for 30 secs each side. Served with poutine (made from Ramos potatoes) and fresh cabbage. I've missed doing this.

The only downside was this was the last of our Tsunami Spin, but we're heading to Canada in September so maybe I'll be able to pick some up there.

We don't get cheese curds here so rely on shredded cheddar and moz ... which, now you've said that, I realise i missed out. Oopsie but nobody else noticedpaqman said:where are the cheese curds? 👀👀
